KOMANDOO ISLAND RESORT’S NEW LOCALLY INSPIRED MENU AT AQUA RESTAURANT

Komandoo Island Resort & Spa’s glamorous overwater a la carte restaurant, Aqua debuted a new, imaginative menu where each guest will get to experience gastronomic pleasure like they haven’t before with the infusion of vibrant international flavours with exotic local Maldivian flavours.

This restaurant, with interiors that are full of warmth and comfort, uses all-natural, fragrant herbs and aromatic spices that are sourced from the island itself and also uses seafood that are freshly caught within the atoll and delivered to the resort by island fishermen and produce from trusted local suppliers. This spirit of Maldives that's being captured by Aqua was conceptualised by Executive Chef Christian Wiedenmann, wherein the menu has an array of cuisines from all over the world but perfected with a Maldivian touch.This genius take on food can be seen from dishes like ‘ihi homos’, which comes with curry leaf tempura lemongrass and scented seafood broth, a divine ‘sustainable pole caught yellowfin tuna served with beach herbs and pickled radish as well as ‘Hinnavaru fisherman’s catch of the day’ served alongside a Thai salad and steamed jasmine rice.

Complementing this otherworldly dining experience, guests get to indulge in freshly-baked bread with a signature ‘curry leaf butter’, provided at the beginning of the meal along with the liberty to choose from a tasteful collection of specially selected bottles of premium wines. And, the experience gets even better with the diners finishing off their meals with a delectable taste of ‘coconut bavarois dome’, a grand medley of mango fruit leather, mango coulis, mango sorbet coconut crumble, merengue and a wondrous ‘mishti doi’, made with Bengali-style baked yogurt and caramelised Lhaviyani Atoll bananas.
